Roasted Peppers Lonely Hearts Club Sandwich

Ingredients
2 slices Healthy WayTM Bread
1 oz Garlic Pesto
2 oz Each of portobello mushrooms, red pepper, zucchini, and eggplant
1 oz Olive Oil
1 oz Lemon Juice
1 oz Feta Cheese
Preparation
In small bowl, combine pesto, lemon juice, and oil to create marinade. Slice all vegetables and marinate for 15 minutes. Grill vegetables, basting occasionally with marinade. Layer vegetables on one slice of Healthy WayTM bread and top with feta cheese and second slice of bread.
